I like this idea. I’m thinking placing the pineapple on top allows the juices to run down and keep it moist while cooking it at the same time? Do you have anything in the pan at the bottom?

There's a 1" slice of pineapple at the base and a 1/3" inch slices every 2" or so. All the pineapple can also be added to the taco itself as part of the condiments.
