Didn't have to cook for Thanksgiving since my brother was hosting for the occasion.  I did have enough time to make al pastor for brunch before we headed out.

There's a 1" slice of pineapple at the base and a 1/3" inch slices every 2" or so. All the pineapple can also be added to the taco itself as part of the condiments.

Thinly sliced pork shoulder marinated for 24 hours and used for taco.

I doubt you would trade the humidity and once a year hurricane in Georgia for Seattle's 7 months of rain.
