Pork Wellington
« on: July 24, 2018, 10:58:00 AM »
Up north and having a blast!

Made about 10+ pounds of chicken this weekend, 5+ pounds of sausage, stuffed mushrooms, grilled onions, shrimp, now today!

Pork Wellington

I’ll take a few finished pictures, even if it doesn’t come out perfectly. So far it’s looking perfect. That’s what scars me. [emoji23]

@Travis  Thanks! Cooked at 400 for 1 hour turning the cookie sheet every 15 min, added pecan wood and apple wood. Took off the grill when internal temp was 158 and lightly wrapped in foil for 30 min or so. It was a perfect medium.

For the first time making it thumbs up. I would however change one thing. The next time I will put a cooling rack on top of the cookie sheet to have the bottom cook better.

As for taste... it was WOW! Wife loved it, I loved it. So it’s a keeper in my book.
