Birthday Brisket for George

Nothing fancy, but I figured I'd do nice long cook for George's birthday. I had a 4.5 LB brisket piece in the freezer that I picked up on sale. This was my first brisket cook and made for a fun day of tending to the grill.

Brisket went on early with Meathead's Big Bad Beef rub. MY workhorse 2009 performer with a 2x2x1 snake and pecan chunks got the call.


Cooked it on the performer at about 225-250. Used the Texas crutch when it hit 150, about 4 hours later. Then ran it up to 200 after about 7.5 hours. Finally into the cooler to rest for an hour. Here is the final result.


And the plated pic for George with broccoli and an au gratin potato ball.


Overall a fun cook. The brisket came out well but was a little dry. It was a good starting point for future brisket cooks though.

Thanks.  I was a little surprised when I cut into it and saw the line was so distinct.

8:30 in the morning and now I'm hungry for brisket. Of course, is there really ever not a good time to eat brisket? Looks great man!

Thanks Travis. I chopped up some of the corners of the flat and threw them back on the grill with some BBQ sauce for some burnt ends (i know, burnt ends are supposed to be from the point...).  They are in the fridge waiting for lunch and I don't know how long I am going to be able to wait to dig in :)

I'm personally not a big brisket fan, but it looks great!  Nice smoke ring.
