Weber Grill Restaurant Vids

I lost a video I did the last time stopped in at the Weber Grill in Chicago, but will do another next time I'm in town. Here's a couple I found that show a little more detail and technique on the big rigs they use. These kettles use slide-back lids. I've seen some with hinged lids now - much quieter. Those slide-back lids make quite the racket, but it's music to a grillfella.

We went to the Chicago location several years ago.
I felt overwhelmed like a kid in a new high end toy store.

Love to go back and absorb more of the kitchen and equipment.
Food was really very good.  Nothing like live fire cooking.

Looking at those grills now really makes me wish for a
Ranch.  It would allow a very large super high heat zone
with plenty of safety zone.  Done it before on a home
made 55 gal. drum grill but there's nothing like a kettle.

I did not film these. When I do vids (or pics for that matter)  I use my Canon G15. It does an OK job.

I'm from SoCal and have noticed something over all my years here in cali and places I've traveled in the US (ny, Texas, Washington, Colorado, etc..)

From "mom & pop" shops to big chains, from Chinese and Japanese cuisine to French & Italian & Ameican cuisine and everything in between, I see that most of the cooks in the kitchens are Hispanic/ Latino...etc.

Being Mexican myself if see that as being pretty damn cool. 

Cooking in the restaurant business is tough enough, let alone learning another cultures cuisine and cooking it day in day out to the chefs, owners and patrons liking that's to be commended.

Agree. And those guys were busting their asses. I assume it's hot in most kitchens but being on a RK for hours on end has to be another level.

Looks like the hotel I am at for work in a couple days is right next to a Weber Grill near Chicago. Pretty pumped, might have to check it out!

Latinos in the kitchen is very correct I have seen alot of very good cooks of the Latino background.
My favorite Chinese Mongolian grill iz mane by a Latino and he is very good.
I have been to the Indy Weber Grill and it was really great while waiting for the food you go watch the cooks those ranches smoking, and all the chimneys on the burners get involved ready.
And the smell is beyond good.

I did an order to go at the Schaumburg location. Awesome place! I could smell the restaurant from my hotel. If I could do a separate tip just for the people running the grills, I would They are hardcore!

They get those sourced from the same place that makes the grills I assume. I'm sure a local shop can make one for you, but it's going to be spendy.
