Hi Troy, just joined the forum and read your post on the Slow n Sear in the 26" kettle.

Am taking you up on your offer for that Filipino bbq chicken recipe...

Sorry for late reply @HeatnSmoke and everyone else.

The secret recipe is actually a bottled marinade product.
But hear me out here - i have made this A LOT. And I have made this for a LOT of people.
It's always a big hit, and people ALWAYS want the recipe. It's THAT good!

The product is Mama Sita's Barbecue Marinade.
It's available on Amazon, but it's a lot cheaper if you buy locally.
You can typically find it at asian grocery stores, but some normal grocery stores carry it in their asian section.
At asian stores like 99 Ranch, H-Mart, Seafood City, you'll either find it with the soy sauces or in the filipino section.
If you have filipino stores, they'll definitely carry it.

It kicks some serious ass with chicken and beef.
Boneless skinless chicken thighs marinaded in this stuff for 12 hours, and then served with hawaiian bread and grilled pineapple is my all time favorite food.

Yeah, so everyone knows - this stuff is a 'secret recipe' for filipinos.


Funny story about this stuff. A decade ago (or slightly more), I was REALLY into grilling. I didn't even have a Weber yet. But I was into it. I had dinner at the Weber Grill in Chicago and one of the appetizers blew my mind. It was 'steak on a stick' essentially. Tender chunks of steaks glazed with a layer of heaven itself. I loved it so much that I vowed to make it. I looked in all of Weber's books - that recipe wasn't public. I spent a year or so pissing around with different asian and teriyaki marinades. Eventually I was really close. I was making a homemade teriyaki and glazing with a hoisen molasses mix cut with a splash of saki. It was lovely.
Then I went to a filipino bbq with my wife. Some dude grilled up these meat skewers that made me wanna turn gay and be with him forever.
Just messing with you.
But seriously, these meat skewers were fricken magical. VERY similar to the meat on a stick from Weber grill
Then he showed me the bottle.
I immediately had a flash back of all the hours and dollars spent trying to figure out that recipe.
