How To Make A 22.5 WSM Seem Not So Big

Park a 26er next to it:



2 whole racks of ribs cut into sections and a single beef rib:



Using cherry and Scotch barrel wood for smoke. Will add some pics when done.





It's gonna rain and I am not really that close to finishing so without the lid, cooking grate, charcoal basket (thank goodness I chose to use one) or charcoal grate I moved the Aristocrat up under the gazebo.....reassembled it....took the opportunity to shake the crap out the charcoal basket and top it up with fresh lit coals. The wife is pissed but my cooker is gonna stay out of the rain:

Grate pics! I agree. I was showing off some 4th of July pics and my new to me 26" made my slightly less new to me 22" look like an 18" at best.

Finished ribs:



I have done beef ribs a few times before....and they always sucked. This one large rib I did turned out great....the pork ones were quite good too. No plate shot.

I haven't had great luck doing ribs yet...a guy at work told me to try the 3-2-1 method.  3 hours smoking, 2 hours wrapped in foil and 1 hour out again. Not sure of the temp.
