Memorial Day Prime Rib Dinner

Here are the pictures from my Memorial Day BBQ.
We started with Hard Eight seasoning on the Prime Rib. I set the charcoal in an indirect configuration with Cherry wood chunks on top.
 I adjusted the temperature to about 300 for the first hour then put in the temp probe into the meat  and waited for it to reach 125 degrees to pulled it off.
It sat for about ½ hour. The other part of the meal was garlic mashed potatoes and swiss chard with bacon and onions.

Prime Rib is the boss!!   Interesting on leaving the bone free - I always tie mine to the meat so they don't separate.   this seems to work well - can't argue with results!

 I think we should have tied it down.

Looks great.  I only have Prime Rib on Christmas...otherwise I would weigh 400lbs.  I eat two giant slabs and then have what I like to call the "meat nap."  Memorial day might be a great addition to the Prime Rib calendar.
