Last night we tried to satisfy the non heat chicken lovers in the family with "Cherriyaki Chicken Wings"
Layed the wings out and gave them a light coating of olive oil...then sea salt and Memphis Dust. Let them sit for a couple of hours.
Got the grill up to 325, threw a couple of chunks of cherry on the coals and put the chicken on the indirect side. Also put the Cherriyaki sauce in a small bread pan and placed in the grill to heat up and suck up some smokey goodness!
The Out of the blue thunderstorm made an unwanted visit...and after the lightening stopped went out and 'OL RP was holding steady at 285-290. Continued to cook the wings until they hit 155-160 and then coated in the sauce and put back on grill over direct coals. Flipped and cooked until they hit 170. Once I got them in the house they didn't sit for long...
