Really curious how much better the thin “double wall” works at maintaining temp compared to a regular kettle[emoji848]
Amazing!
It’s hard to believe that it’s been three years ago...[emoji51]
It looks incredible. How did it cook?
Enough air flow?
It seemed to cook a lot hotter than a regular kettle. The kebabs were cooked the same amount of time as the last few times and these had a slight charring that the last ones didn't. It may have been that I threw a couple of very small apple wood pieces on this time that I haven't in the past. That may have spiked the temps. Or it could be one of these reasons........................
Even though I put vents back on the bowl, the kettle has a lot of other holes throughout the bowl from rust through.
Or, it could be this little issue with additional vent holes. Apparently my welder didn't get the part about lining up the vent holes on the two kettles prior to welding. He had only lined up 1 vent hole on each of the 3 vents clusters. I quickly got past this little hiccup as life is to short to dwell on snafus. I didn't think there would be enough air flow with only only 3 vent holes (instead of the usual 12) so I had him drill 9 more vent holes. Another reason the internal ash pan from the Happy Cooker is being used.
Definitely won't be using this one for any low and slow cooks, that's for sure. I will report back after using it a few more times. Hopefully it won't take another three years to accomplish that.
