WARNING! This burger breaks most of the rules! I knew I wanted to do something different. Everyone loves a good breakfast sandwich, so why not do a breakfast burger? I've been messing around with Paleo cooking, so a bun was out, as were potatoes. So how to satisfy that itch? How about a Chorizo burger on Spaghetti Squash waffles with rutabaga hashbrowns? Buckle up, here we go!
Squash is halved and baked at 400 for 45 mins. Let cool, then scraped out and wrung out in a clean towel.
The squash is mixed with two eggs and salt in a bowl. Makes a thick batter. Half and half ground beef and chorizo in a half-pound patty. Rutabaga gets shredded in a Cuisinart, mixed with one egg, garlic and onion powder. A little siracha-mayo to bring it together at the end.
Hashbrowns are on, grill is ready in the background. Waffle iron is ready, so the batter goes in. Burger hits the grate. Add some bacon to the pan for good measure.
