Caveman skirt steak

Hi everyone, over the weekend I decided to try cooking steak directly on the coals. I used Royal Oak 100% natural lump charcoal. The steak was about an inch or so thick, so I did about 2 minutes on each side. Turned out way better than I thought, one of the best steaks I've ever made. Just used pepper and salt for seasoning. Decided to also grill a couple filet mignons, 1 just in case I really  screwed up the steak and the 2nd for lunch the next day.

+1 on cave man steaks. Some of the best ribeye steak I've ever done were done this way. 4 minutes per side. Perfect. Get them cut thick though, inch and a half is not too thick.

+1 on the caveman style.
Saw Alton Brown do it years ago on a kettle. It was for fajitas. Turns out great.

Everyone I know thinks I'm crazy and they give me that wide eyed look when I speak of caveman steaks. It's all ok though, 'cause I KNOW.

I made these caveman ribeyes tonight.  They were friggin phenomenal.
These were 1.5 inches thick, next time I'd go 3.5 minutes per side.

Going caveman definitely imparts more of charred crust, so I have to adjust the timing based on preferences. 

I made caveman ribeyes again this week.  1.5 inch cuts for the guys and 1 inch cuts for the ladies who requested "less caveman".   Since their cuts were only an inch thick, I used a CI grate on the coals as a compromise.  This also prevented the coals from sticking, to your point, @joetee.


Super easy and very tasty.
