Started this morning by throwing a pork butt on the faded/patina black. First time using the SNS for a smoke, loaded up and with some cherry wood for smoke
No better way to work on building up the gunk/seal than smoking a butt, man I love this grill[emoji1]
After about four hours, and mopped with my Carolina vinegar sauce
In the mean time I thought George would want some wings for lunch, so I fired up the performer
Around the vortex, after the flip
Tossed in a homemade honey-chipotle sauce
Now here you go George, just sit back and wait till that pork butt comes off for dinner!

After about eight hours, I went ahead and wrapped it up so we could eat at a reasonable hour.
I hope to be making George a sammie and some nachos around 7:00, so I'll keep you guys posted!
