My first WSM cook
« on: December 13, 2016, 11:57:01 AM »

Tri Tip.  Low and slow in my WSM.  Cooked for about 2 hours until it hit 125 on the probe.  WSM temp was between 225-250.  Hovered mostly at around 235ish.

Rubbed with Kosher salt and stashed in the fridge overnight.  Then the morning of the cook, rubbed in garlic powder, onion powder, black pepper and paprika.

Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.
