My kettle's maiden voyage . . . spatchcock chicken

For my first cook on my new Weber Kettle (and really my first cook ever on charcoal, exempting some pretty lousy cooks at beaches or parks) I decided to do a spatchcocked chicken. Simple brine for 2 hours on Saturday, then allowed it to air dry until Sunday evening. Seasoned it with Kinders BBQ rub while I got the coals going, then made use of the SmokeNSear for 2-zone cooking with a chunk of applewood. I was shocked by how well I dialed in a 350-400 cooking temp for the length of the cook. Totally pleased with the results. Flavorful, super-moist chicken. Excited to keep on experimenting with this grill!
