Orange roughy braised in an iron skillet - sadly inside, but my wife if the chef for dinner and it was amazing. WSM will be heating up tonight, about 9pm and a 10lb pork shoulder will be low n slow’n overnight. Not wrapping, going to push through the stall, estimating a 15-17 hour cook.[emoji1]

Post some results when you can.
I always push butt through the stall, never wrap. Once it gets to that point there's enough smoke and it's all about that magic 203 degrees internal temp, so I let the cooker run up to 275 or so.

12 hours in, temps on the WSM holding all through the night, no problem...still a ways to go....
