is there any way to get the rivet tight again, or just drill it out and nut and bolt it?

You need the correct size domed rivet anvils. They are a two piece mated set that you set on opposite sides and apply pressure by hammer or hydraulic press.
I'll be fabricating a jig this summer to set rivets on lids and bowls. It will be heavy and large but a perfect size to transport to a WKC meet.
