Smoked Chorizo Strata and a breakfast fatty

  I generously rubbed a small bacon weave with brown sugar and cayenne pepper . On parchment paper I flattened out 2 pounds of breakfast sausage and added some diced roasted potatoes mixed with Colby Jack and cheddar cheese. Using the parchment paper I rolled it up and twisted the ends to form a loaf. I then dusted with weber spicy chipotle rub and put on the grill at 250 degrees for about an hour and half or until I reached 160 degrees or so .







I smoked the fatty with some apple wood and decided to throw the ground chorizo on to get some flavor as well .


Next I heated up a skillet with butter to that I added  onions and tomatoes and cooked until tender. I added some canned green chile and then the chorizo .


I mixed 8 eggs and a little milk , those went into the skillet along with two big handfuls of shredded cheese .

Next some freshly chopped cilantro





 

Sliced up the fatty

Baked the strata on a warming rack at about 225 until a toothpick came out of the center clean , which took about an hour.

And brunch is served

No kidding!! That looks ridiculously good Ida. In terms of breaky on a kettle you're on another level man...

Nice cook. That fatty looks tasty, but the strata looks awesome. Now I'm hungry again...
