My son-in-law to be (aug 30) brought up some fresh Alaska halibut. Fish taco time!
Mango/Avocado, cilantro salsa and chipotle crema (chipotles, sour creme, mayo, lime juice, salt and pepper):
A few nice fillets lightly seasoned with a nice dry rub
Bisbee gets the call. I was going to cedar plank them, but was out of cedar. Instead I cooked on foil and went heavy with cherry wood smoke, using Royal Oak hardwood:
Gratuitous shot of Bisbee's custom Zav Koa wood handle. Brian - I always come back to this handle, it is beautiful!
Just right:
Nothing like hot, fresh tortillas:
I forgot just how good these are - the firm, smokey fish, the tangy, spicy crema, and the fresh sweet taste of mango. The payoff:
Fish tacos are pretty straightforward but oh-so-good on the Weber. Cooking on Bisbee makes them taste even better!
