When grilling bacon I also decided to char some Hatch peppers. A good accident when a pepper contacted the bacon, GOOD STUFF!  I’ll try it on purpose next time maybe a pork chop. Some Hatch are hot and others mild so know what you are using.

Yeah, I got mild at one store & they were way more screamin' than most jalepenos....don't know what their hot pile might contain.............got some from a different store, one undetermined pile & they were a nice mild....

My guests were mentioning the heat lol , me and the wife love hot so I told them they were being sissies , lol . Maybe they were hot ones , too funny

That's funny because I was going to do rellenos this weekend with a few , mine don't look like that ? I stuff with cheese and then into egg whites and pan fry , maybe have to try Stevie's way :)

I’ve inquired about heat difference and got different answers. A kid mixed them up at store as joke, sometimes it just happens in the field through back or cross pollination etc... However they do vary greatly and both have a place just give them a taste test.

I got about two hours worth of roasting to do....have fun, the flavor is worth it.... ;D

some people say not much different than Anaheims, but I think they're a lot better.....

Hatch chiles on sale for 1.29/lb at my local Harris Teeter, so I bought a bunch for myself and a couple friends. Made a little salsa at lunch to get dialed into the flavor/heat, and then tried some chile Rellenos and salsa verde for dinner.

I roasted them and peeled the skin off... seemed to give the breading a bit more traction, and added some flavor.  And as luck would have it, the salsa verde was prolly the best I've made this summer-- even without any cilantro!
