5000 and first cook on the brownie

My 5000th post.  Thanks for listening to my babbling and thank you wkc.

Today I hosted Christmas and I cooked a turkey and a ham. I didn’t get pictures of the ham but it turned out very good.

The turkey was incredible. No brining no injection. Just some seasoning and a small piece of apple in the coals. Very juicy. I went back to using my diy large basket on one side slightly biased towards the dark meat end of the bird. I like using one large basket because i only have to refuel once on a three hour cook. I maintained 350 most of the time.

I haven’t tried putting anything in the cavity on the roti yet. I kept this one pretty simple.  Ham and ham gravy is more the focus on our Christmas. The turkey provided some variety and holiday fun for me.

What do you recommend for the cavity?

Your favorite herbs/spices, butter, lemon slices, garlic, scallions etc. Keep the cavity loose so don't pack it in. Stuffing the cavity with too much items will only prolong the cook time.
