So, we went into Costco to pick up a pack of St. Louis Spares to cook tomorrow/Sunday.  (I have to admit, I do plan on using my pellet grill to cook the ribs).  Could not help myself, came across a package of beautiful 1.25" - 1.50" USDA Choice T-bone steaks, which were more like porter house to me, and had great marbling for a Choice steak.  Being the steak loving family we are, did not have to twist my wife's arm when I showed her the package and she said..."That's dinner tonight"!  My son is home from school, and this would make him happy too.  The only one not really into steak and meat is my daughter, but I knew she would have some, and we would make her some chicken tenders etc.  Got the steaks (and ribs) home, seasoned the steaks with steak seasoning and Montreal Spicy, and got the charcoal lit.

Put the steaks directly over the coals for 1 minute, moved them from the grill over the coals to the side without the coals, and rotated the grill back over the coals for another 1 minute.  Flipped the steaks over and did the same thing on the other side.  Then I moved the steak to the grill without the coals under and covered the kettle.  About 11 minutes later, with a instant thermo reading 130, removed the steaks and let them rest for about 6 minutes.  Cut both the tenderloin and the sirloin from the bone and sliced.  Don't worry, plenty of good meat to chew off the bone too.

Steaks were fantastic.  My wife commented it was the best steak she has ever had.  You should know, we grill steak a couple of time a week, and have been to most of the good steak houses.  For decades I grilled steak with the gasser, but now, I have found myself grilling only on the kettles.  Just sumptin 'bout that charcoal/wood flavor!  Between the kettles and my pellet cooker, the gasser does not get much use anymore.  Two months ago, I owned...ZERO kettle or any other charcoal cookers!  Now it is my go too cooker!

I have not tried to do a true BBQ low and slow on the kettle yet, sorry!  Last week cooked 40# of butt for a party and a brisket flat for the family, all with the pellet grill, and will still do the ribs tomorrow on the pellet.  But when it comes to direct/high heat grilling, I am a convert to the kettle, forever!

Attached pics of tonight's cook, and a pic of the ribs I just rubbed for tomorrow (even though not going on the kettle, had the pic so thought I would share.

Doesnt say it fits the 22, but I definitely have no issues putting the lid on, it doesnt touch anywhere, and fits nice and snug when place over the handles of main grate
