I am having a hell of a time trying to get the temp down to 225. I did it before without any problem. But I think I screwed up. I scraped the bottom of the bowl clean for the first time and now my lower vent doesn't set tight against the bowl. I've got it closed and the top vent barely open and the temp is 270 on a fatty.

Are the ash sweeps relatively tight to the bowl or did you bend them upwards?  Best way to tell if you screwed them up is shut all vents after a cook. If it extinguishes the coals in a half hour than no harm.

And I agree, that temp is good.

There was a lot of crud built up on the bottom. I scraped it off using a painters stick. This allowed a gap to form under the vent legs.

Perform test and replace if necessary. Something to be mindful of is to try and prevent sweet basting sauces from collecting in the bowl. They will "glue" the sweeps to the bottom. You can carefully use a scraper to break them free but if your aggressive with it, you will bend the sweeps rendering them useless.

If they are bent to the point they no longer make any contact to the bowl then you don't have to bother with testing.

LOL I added the tooth picks during the cook to help keep the bacon in place. They seemed to fall away.

If you really want to lower the temp open the lid and pull some lit charcoal out with some tongs. Works every time.

Yep I think so. Now waiting for the bowl to dirty up a bit to seal the vent.
