Ok. I figured out a way around the grill running to hot because the air intake not sealing well.
1. Leave some Ash in the bottom bowl. The Ash built up around the vent helps slow air intake.
2. I run a snake in the Slow n Sear. Not filling it up to the top.
I like the Slow n Sear because of the heat deflecting away from the food. The snake in the bottom is long enough for a good while burn you can always start the snake back the other direction before it goes out.
So until I replace the 3 wing vent, this is my approach and it works.
