Trying it out for first time. Wsm no water. 1 bottom vent half open. Ttt set at 4. My therm says 204 degrees. I was aiming for 275ish. Based off my one and only time using wsm with water, I figured temps would jump up pretty quick running dry but hasn't been the case.

I set the dial to 5. I think I'll leave it be for awhile. Smoke coming out the top feels pretty hot to me. My therm might be off but I can tell from feel that there is cooking going on inside.

Well I'm going to need some practice with both the wsm and the ttt. I put the ttt on before up to temp then had to goof around for a couple hours stabilizing my temp. Mistake 2 was I think I left them on a little long. They came out tender but I didn't care for the flavor compared to my normal on the kettle. I fought to get temp up then it went a little high and the ttt was mostly closed the last hour or so which I think affected the flavor. I'm sure it was user error but I'm going to put the wsm aside for the moment and get back to the kettles.

I see your in Texas so might not be worth it since I'm in Il, but if you choose to sell the wsm, willing to ship and it's in my price range, hit me up. I'd rather buy from a member and keep it in the club.

Shipping an 18" WSM would be $$$. I talked briefly about trading my 14" 1880 to a member, but even the 14" was gonna be high.

Don't get discouraged @HoosierKettle . The WSM is a bit of a learning curve, but so much better than the kettle... once you get the hang of it. Run a few yard birds through it. They are cheap, pretty forgiving and season the cooker well.
