Dinner on the WSM
« on: October 08, 2013, 05:38:46 AM »
With all of the talk about WSM's lately, I thought it was time to break mine in. I picked this up months ago and have finally gotten around to using it.

I picked up some country style ribs, potato's and brussel sprouts for it. I used a combination of peach and red oak for flavor and rubbed the meat down with Dizzy Pig Red Eye Express. It's good stuff, but will just use it on beef from here on out.

Here's what it looked like, I even roasted some garlic for the potato's.

Maybe some of you wsm'rs could share what you use as your upper grill rack. I could really use one. :)

Nice looking, cook!! Don't have a WSM yet. There are some kettle colors I need to get first!

Looks good Duke. Did you like using the wsm for a cook like this? Or would you prefer a kettle?

Thanks for the great questions and replies.

Kendoll, I used to have a fold out rack to put more food on the top grate and sold it at a time when I hadn't used it for a long time. I also didn't have a wsm at that time either. Well, now that I have another I want one again.

here's a kind of third teir you can add

http://www.smokenator.com/Store/p/46/deluxe-individual-hovergrill

i have a 22 wsm and I never really have space issues.  most i've ever cooked is 3 racks of spares and 18lb brisket and i had room to spare.

but I've seen people build a third tier on the top rack using another grate and some nuts and bults on the outer edges to connect to the top rack.  those look sturdy and it works.  plus cheap.

EDIT:  oh, i reread and I think you were asking about an actual top rack, not another tier.  can't you just order a top rack from weber?
