Bare bones Brisket

Kroger had packers for $10 off so I picked one up Saturday. Brought it home trimmed it and rubbed it down with kosher salt and black pepper. No fancy rub, no injection , no marinade, just salt and pepper. I've got nothing against fancy stuff and sometimes I feel like putting on the dog but sometimes it's like Waylon sang "isn't it time we got back to the basics of love". I do truly love brisket.  Threw some pecan in the WSM Sunday morning, then reaped the rewards late that evening. Salt , pepper, and pecan, sometimes it pays not to over think these things.
