My wife just mentioned that she needed to make some more summer sausage. She started hunting for the recipe she uses which is for making it in the oven. I told her let's make several different ones and see which one we like best. Does anyone know of a good beef or beef/pork summer sausage that can be smoked in a grill or smoker? I looked to see if her oven recipe could be done in a smoker but it is cooked wrapped in foil with holes poked in the bottom so it is essentially steamed and would not pick up any smoked flavor through the foil.
