Chile Cilantro Lime wings

Chile-Cilantro-Lime wings, with spicy slaw and "grilled spanish rice".



Grill shot:



Grilled Spanish rice is just your basic low quality boxed Spanish rice, but kicked up with grilled corn, grilled green chile, and grilled carrots.  It makes for a smoky rice and I have really been enjoying it. Make the cheap rice a day ahead, and add the grilled ingredients when you serve it.  I have found boxed rice (which really is bad) is better when reheated in the microwave. Go figure.  I have added grilled tomato as well, but prefer it without - they mush up a little.

That looks really damn good g$! Love the idea of adding more to the boxed rice. My wife loves that stuff but its ok plain to me. I bet I would love that fixed up.

Looks really good & I like the idea of grilled elements added to rice....Good show !!!

For the wing sauce, I used:
A large amount of Sriracha Sauce
A large amount of lime juice
A half bunch of coarse chopped cilantro
A lesser amount of apple cider vinegar
A lesser amount of butter
An even lesser amount of white sugar
One spoon full of diced garlic
pinch of black pepper
pinch of red pepper flakes
Heat all ingredients on low......

Dunked and grilled the last 20 minutes to set a glaze  ... but then redunked 'em 3 or 4 more times because I was loving the flavor when eating. In other words, reserve some sauce to adjust to your flavor desire as it is rather mild at first.

Pretty similar to my Spicy Sriracha Garlic Stuffed Wings recipe, those are awesome so I bet your wings were good! They look great!
