Boston butt last weekend
« on: March 24, 2014, 03:42:52 PM »
http://s1277.photobucket.com/user/2wheel1/media/Mobile%2520Uploads/photo-5_zps31a86d59.jpg.html?sort=3&o=1 It was beautiful last Saturday so I cooked this at 275 for about 6 hours. Rubbed it with Carolina seasoning the night before and poured a mix of apple juice and brown sugar over it as it cooked. Took it off when temp reached 187°
Yes it was good.

 Nice !!!!

If you wait it out for slightly longer (197 ~202) & rest it wrapped in foil for an hour ( yeah, I know....impossible to wait !!!) it may very well pull easier for you.....

Looks dang good though !!!!!!!!!

 Way ++++++ points !!!!!!

+1 to Ken's suggestion of taking it past 200. I did a butt 2 weeks ago and took it to 207, then rested for 2 hours. Was probably the best I have done so far, that was certainly my wifes opinion.

And Ken, points? :) You spending a lot of time at SM lately? ;D Maybe a suggestion for 'What Next?'.

I pulled the ends of it and sliced the center. I used the slices on a steak roll with some hot sauce and a mix of yellow red and orange bell peppers. After the cook I wrapped it in alum foil and let it rest about an hour.

The roast rack worked very well for removing the roast from the grill plus I could put the drip pan right under the rack and it helped protect the edges from getting overdone/burnt.
