Expecting my new Summit Kamado to be delivered by the weekend! I already have a 40 lb bag of lump.

What wood chip types and quality brands do you recommend to start with in my arsenal?

Seeking a Black Sequoia I know I know, I'd settle for just the tabbed no leg grill

I prefer wood chunks from here

Is this wood naturally seasoned or is it kiln dried? I can't find it said on their site.

Any quality wood chunks will work fine. I get them at BBQ's Galore. Oak, Hickory, Pecan, Apple, Cherry.
Bought some B&B wood chunks also. Available at most local stores.

That's a great resource! I will stock up. Looks like they have a few options for cuts. What size(s) would you recommend for a Summit Kamado?

Also, I see no one seems to soak their wood. Back in my vertical smoker days, it was recommended to soak smoking wood overnight, if possible. Is there a trend aways from that?

Naturally dried to a specific moisture content, I love this brand, and you use a lot less once you get the learning curve

What's the learning curve?

I use 3x3 chunks, I previously bought chunks anywhere and would use 6 to 8 chunks to achieve desired amount of smoke for say a 12 hour low and slow. I now only use 3 or 4 of this brand and get better smoke too.

So no learning curve with this particular brand? You're just saying you learned to use a better quality wood to get a better result with less?

And there is the difference between kiln dried wood and naturally seasoned wood.

michaelmilitello

It takes some effort, but I have a local source of hickory, oak, and apple from a farm.   I split it and cut into chunks.   It's all naturally seasoned, which is the best.   The kiln dried stuff goes up like a match.

I use chips for quick cooks and chunks for longer cooks, also soak the chips but not the chunks.  I have used Cowboy brand or Western and had good results..
