Last nights fijitas dinner. Pic heavy

From the start.
Peppers and onions.

Put em in the veggie basket.

Ready to take em off.

Time for the star of the meal.

Taken off grill and rested time to cut.

Half way through plating... mmmm fresh homemade guac!

And ready to eat with a ice cold beverage. This is a Sunday night mainstay at my house.

Thanks all for reading. It is nice to have a place to share my love of charcoal, webers, grilling and food!

It is a good meal. Very filling. Leftovers are always good the next day. It is something that I started making years ago. Buying the chicken already marinated and buying the guac already made. Then evolved into me making the guac with a seasoning mix. I now make the guac from scratch the whole way while putting my own twist on it, I must say still room for improvement. I am working on the chicken part. Last night being the first time I have made the marinade from very little pre-packaged stuff. Me and the girlfriend actually preferred last nights chicken over the stores as I bought while breasts and trimmed and pounded them out flat myself.

Thanks Ron and kendoll. And kendoll your fijitas look great also. I have yet to really venture into making beef fijitas. I will do them one of these days though.

Those look great! I applaud your exploration of making things from scratch. I really enjoy that myself. Of course the wife's side of the family is from Mexico so I have a leg up on what it's supposed to taste like. We also have a substantial Hispanic population in the area so there are some great restaurants and markets. I've only ever made guacamole from scratch. I like to formulate my own rubs and seasonings from the component spices and herbs. Then I can very them a little this way or that (usually by adding more garlic  ;D  ::) ) to suit my tastes.
