Ranch Kettle Pig on a rotisserie
« on: January 03, 2021, 05:20:29 AM »
New Years Eve I cooked a 42lb whole pig on a Ranch with a rotisserie

Pig was brined for 24 hours
Injected before cooking and basted thru out the cook.

Total cook time was 9-1/2 hours with RO lump charcoal. Cook used 20lbs of charcoal.

It was a fun cook and I would do it again.

We also had a bushel of Texas oysters to grill and steam while the pig was cooking.

Where are the grass skirts? I see a blue peeking in one of the pictures. Very nice.
