That’s similar to how my local butcher does tri tip. They also leave the fat cap on. I like fat but tri tip fat cap tends to be tough and chewy so I remove it completely before cooking.

If I go back and they have a similar piece labeled tri tip I may need to do that. But the fat wasn’t super chewy at the end so I ate the hell out of it and trimmed it off for my wife and MIL since they aren’t fans of any fat

I went back to same butcher and got a frozen cut  that is labeled tri tip.  I don’t much care what it is but I do know it has been amazing. Even as leftover tacos this week.  I destroyed it

I’ll buy this meat again and again. De-damn-licious
