Weird chicken stack

Asked the wife at the store to get some thin chicken pieces. Thinking breast or thigh, or both. She brought home like lunch meat thin, not sure what, chicken stuff. (was on sale)[emoji848]
Any way, cut a large potatoe in half, stuck a couple skewers in the half’s, and stack that chicken on the skewers. Then onto the SF for about an hour or so at around 300. Once at 165, in all places, took it off and cut it down the sides, to make chicken tacos, unfortunately someone forgot to get tortillas....[emoji848]
Was salvaged by the buns...looks like the leaning tower of chicken,
