Beef cheeks

Well, I have had beef cheek tacos here recently, from filibertos, and a roadsides taco stand. They where super good. So manager special, grabbed a few packages. Per Malcom Reed, you got to trim them really good. Well trimmed was a booger, probably 1/3 of what was in the package was thrown out. Fat and hard stuff. Anyway, they are on my SmokeFire with charcoal pellets. From what I can tell they are suppose to be done like PSB, or similar. Will post more pics as we go.

Just checked the pan. They are shredding. Going to leave them on and fix the rest of the food then take it off. Will add more pics in a bit.

OMG!!! It turned out incredibrew!! Succulent, tender, melt in your mouth....wow! I usually don’t enjoy my own grilling the same day I grill. But, this was good. So I did an hour and a half uncovered on the SmokeFire, the placed in drip pan with onions and sweet peppers and chopped garlic. It was initially at 300 degrees. Into the pan with beef broth, filled almost full, then about 4 more hours at 350. I rubbed it with Lawrys carne asada seasoning, and bad byrons butt rub. Highly recommended.

Your Tacos de Cabeza look good.
Beef cheeks are a pain to clean, but well worth the effort.

One of the reasons this was so amazing to me is, I’ve had gastric bypass surgery, and have to be careful what I eat. Softer foods are my friend, otherwise I have to chew it up...ALOT! This was so tender, it went down great...
