Cedar planked salmon
« on: April 15, 2020, 05:01:56 PM »
This cook’s for @hoosierkettle and @lowbrass.

A very fun and simple cook.  Cedar plank salmon, skewered onions and peppers, wild mushroom and green pea risotto.  Thanks for looking!

Awesome looking meal, how did you keep the risotto from falling thru the grates?

Awesome looking meal, how did you keep the risotto from falling thru the grates?
... by using my new Staub dutch oven.  Sautéed garlic and shallots, fried the risotto grains until semi-translucent, added peas and rehydrated mushrooms, then gradually add boiling chicken stock and shroom tea to keep the liquid level just below the surface.  Finished with parmesan and heavy cream just before serving.
