That is a beautiful kettle you have.
Do a search on the "snake method" for charcoal placement.  It works really well to help hold a lower temperature for quite a while for low & slow cooks. 
You'll probably learn a lot here.

Hi folks, I’m from County Armagh in Northern Ireland, we own an Airbnb in Belfast so get lots of American friends visiting our lovely country.

Quick update cooking ribs today using the 3-2-1 snake method. Heat controlled nicely around 225 so far all good and nearly finished.

My grandfather on my Mother's side is from Mayo, in Rosturk, near Achille Island.  Went back for a family reunion maybe 15 years ago & his niece owned the house he was born in.  I recommend that wherever someone is from, if they get a chance, go & visit.  If you, @Shoestringshop, wind up going, I can tell you some things I stumbled across that saved a decent amount of cash.
