Who loves a filet ?

Anniversary is today and got these Australian wagyu  beauties to grill tonight. Going to top with lump crabmeat and a Béarnaise sauce .

Filets were 3 1/2 inches tall. Cut them into 4) 1 3/4 filets. Dry brined them for 3 hours with Killer Hogs AP rub. Went with my PK and grill grates for the cook. Got my marks then slid to indirect side to finish at 123 degrees. Let them rest for 10 minutes while i made the Béarnaise  sauce . Topped with the sauce and fresh lump crabmeat. They were so unbelievably tender and delicious.

I get these from The Butcher Shoppe in Pensacola, Fl. Some of the best quality wagyu you can get. Most of the big time Bbq pros use their briskets for competition and they ship meat out everyday if you want to ever try some.

Looks really good!  Love the grill marks.....must be grillgrates.com.  I have a set of those for my gasser and a round set for a kettle.  I need to use those again.
