This is the reason why I BBQ, well not really but I thought it sounded nice.  They are the reason why my Fathers Day is special


I treated myself to a Larry Wolf special Pepper Stout Beef.
First on the smoker with Oak wood for a few hours.


The base is ready - no green peppers or jalapenos.


In the bath ready for the grill


Ready for braising


Almost done


Put'er on the gasser to reduce the liquid, so I can start my side.


Grilled green beans for a side


Plated


It was very good, a little cheddar and some horsey sauce, Thanks Larry.

My wife is obsessed with the Amish and our vacation in 2011 was in a town outside of Lancaster called Strasburg.

Perhaps you live in Blue Ball? or Paradise? or maybe even Intercourse?  Who can knock the Amish with those kind of names for their towns.

Hahahaha, don't forget Bird-In-Band. We have some odd town names here, that is for sure. I am in Lancaster County, a town called Lititz. I'm about 20-25 minutes from Strasburg and work about 10 minutes from Blue Ball. The Amish are a very interesting people and what most people see on TV is not to be believed (ie. Amish Mafia, Breaking Amish...). The Amish Mafia is actually filmed here and it is all based on fiction, regardless of what they say.

My wife has read probably 90% of Amish fiction books on the market.  Unlike TV, a lot of Amish fiction is based on reality.  It was an interesting vacation to say the least.  We were there July of 2011, the week that is was like 105 every day out there so it limited some of out activities.  Nonetheless it was a decent vacation.

I remember that July well. I was in an outdoor wedding during that heat. Not fun.

Smoked it for about 2.5 hours, then braised it for 3 ish and reduced for an hour or so.

Used GrillMates Cowboy Rub and smoked it in Oak.

I was pulling as much as I could during the braising process.

It was very good.
