Fan vs Drip pan: A battle of diffusers.
« on: April 17, 2019, 07:33:32 AM »
A friend asked if i can cook  about a dozen ribs for his upcoming birthday later this month so i decided to cook a sample to determine which version his family prefers.
Both are smoked in a minion method with a 12" charcoal ring using roughly equal parts of Weber briquettes and Fogo lump along with cherry chunks.
Total cook time was just under 4 hours at 270-280F.

Fan diffuser.

We got a split decision. Husband and wife prefer those that were cooked with the fan diffuser while their 2 kids like the drip pan version.  Looks like I'll be cooking using  both versions of the diffusers which is perfectly fine. The kid version would be sweeter, less salt  and probably no peppers.
