This was just brown sugar and salt, keep it neutral so we can use leftovers for lots of different cuisines.
The heat deflector is a solo stove cover with a solo stove ring holding it up. I don’t have a solo stove but after doing research it seems like the perfect solution. It is high quality stainless steel so it should last forever and I can catch all the drippings and maximize my smoking space.
Set it at 225 but it got hotter over night. It was at 203 when I woke up at 7. Wrapped it in foil and put it in a cooler. It was around 140 at dinner time. Had it with bao buns. Was going to have pulled pork sandwiches tonight but the hurricane had other plans. Luckily no damage but the power is out.
