Tried some griddle burgers; I think the fire was a little hot for the thickness of my burgers.
I took them off the griddle and put them on the indirect side once they got a good crust on them and let them smoke on home to medium.
While the taste was phenomenal, was prob a bit more labor intensive than I expected/intended on a Monday evening. Still don’t know how I went so long without a Performer as getting the coals going was easy-peasy with gas assist.
