Great DIY, and the food looks delicious!

What cut of beef is that? Is it skirt steak?
A good friend of mine is from El Salvador, and he cooks up a lot of skirt steak.  And, it's fantastic.

Nopales tips:
Pick the most tender, this means the smaller in size and thin
When grilling keep a close eye, the charred easily. Prior to grilling put a light coat of olive oil, salt and other herbs (dry) to taste
Serve on a warm tortilla de maíz
Let me know how they come out, wife will love them I’m sure...

Yep. Love the job you are doing! I have a friend that needs a charcoal chimney, I might have him watch your video for sure!

I make a similar salsa using jalapeno, tomatoes, onion, cilantro, garclic, lime and salt.... Grilling the veggies is key!

Never considered doing quesadillas on the grill like that. That looks amazing!
