any cold-smoking enthusiasts out there?
« on: August 11, 2018, 07:05:01 AM »
I just purchased a stainless steel perforated 12" long hexagon tube for cold smoking as an upgrade from my holey soup can.  After I check to make sure it works well I'm going to cold smoke (6) 12 oz. Spam chunks and then marinate them in Jack Daniels grilling sauce.  I also do my own bacon, lox, and poached eggs.  Anyone else doing anything with smoking without heat?

Thanks!

Chuck

I’ve got the maze thing. It works great. I’ve only smoked cheese so far but would like to try salmon as well.

I have the maze and made some cold smoked salmon with it. Worked like a champ.

I’ll do more once the overall temps drop. Bought a nice bag of maple pellets so I am ready!!

Im certainly interested in trying it more.  We did cheese once but basically lit one or two briquettes as I didn't know any other method.  So what are some other options for doing this right?
Its amazing how quickly one weber kettle turns into more than a dozen!  Always open to grabbing something interesting so let me know what you've got!

This is what I use. I’m not a gadget guy but this is money well spent for cold smoking. I hear the tubes work well too.

I'm using the stuff from Weber (cold smoke generator) and I'm really happy with it. A full load of wood dust (approx. 15 oz) is good for 15-20 h smoking.

That is an awesome accessory!  It’d be pricey to get stateside though.

The tubes work well, but they burn through the pellets much quicker than the maze. 10 hrs or so through the maze, but only 4-5 hrs with the long tube.

Another cool thing about the maze is you can light one end for light smoke or light both ends for heavier smoke. I have only tried lighting one end so far. I’m starting to look forward to cooler weather.

One of the great things about having smoked cheese on hand is all you need is a box of crackers and you have an appetizer ready to go to a last minute party or if your short on time. It’s always a easy crowd pleaser.
