4th celebration

My town had their freedom fest last night. My house is within walking distance to the fireworks and is optional since you can watch them from my house. It was 90 degrees so those of us with grown children elected to stay at the house. I usually have a fair amount of people over that night. A friend brought 2 pork butts cooked on his pellet pooper that were good. I cooked Nathan’s hot dogs, Johnsonville brats and sweet Italian sausages and peppers and onions on the 74 red. It gets used every holiday.  Unfortunately I didn’t take any pictures of last night but I made gumbo today and took advantage of my new shade canopy for parties.

Can’t beat the Greenwood Freedom Festival! We missed it this year bc we bought tix to something months ago not even thinking about it.

What all went into the gumbo?

It’s pretty basic. 4lbs Chicken thighs, 2lbs turkey polish kielbasa, 2 lbs shrimp.  Veggies are onion, green pepper, celery, garlic. Oil and flour roux, chicken stock, 1 beer, and Tony’s for seasoning and a little file powder.

It was a big hit tonight. It ALL got eaten including the white rice I served on the side. 12 people.

I like the sound of your gumbo. I've got a brother who insists on tomato and okra. I'm OK with okra, but most purists will tell you tomato and okra don't belong in gumbo.
