Second time Baby back ribs LnS

So my son had been asking me for bbq ribs
I finally got to making them yesterday
An I tried the SMOkettle for the first time
Has any one here tried them... what is your experience?
I would say this: the only thing that made feel like this is not all good is that the drippings fall on to a hot surface which does not have any liquid, compared to when you do indirect or snake and food is off to the side. So the fumes of the burning drippings “no bueno”

At the end my son really liked the ribs so all good
Also did a home made bbq sauce with fresh habanero peppers to spice it up a notch or two ;)

The SMOkettle has what they call a mote or water well If you can see it is around the square middle section that is where liquid goes
So middle section is bone dry

Looks delish!  That boy of yours must have some appetite if you busted out 5 racks when he asks for ribs!
Its amazing how quickly one weber kettle turns into more than a dozen!  Always open to grabbing something interesting so let me know what you've got!

The ribs look outstanding!  Nice work!

I'd like to hear a little more about the smokettle inserts.  I've had them bookmarked for years but have never remembered to actually order some.  It looks like the center portion is raised?  If it is, could you put a disposable pan on the raised portion to add a little liquid?  I'm not normally a fan of water pans but it's certainly better than burnt dripping flavor.

I have been busy with work and other familia items, but rest assured that I will get back to you soon.
The meat did not had burnt dripping taste (that I could detect) but I have not made that many ribs to notice, this was my second attempt. Familia did not say anything about ribs tasting funny... Maybe all the Habanero in the sauce made the their mouth numb  :P  :o  ;D
