This is my un-fried clonel Sanders clone.

Its the crunchyest damn chicken you ever put in your mouth...a friend of mine in Toronto said he could hear the crunch all the way from pourtland, OR.

You'll have to be careful eating it because you might injure yourself. I almost went to the hoarspital to get stitches in my mouth after dinner one time.

I followed the same basic technique as the other clonel Sanders clones. The only difference is that I removed all the skin and most of the excess fat, then covered them in corn flakes.

This particular batch was made with BSCT but I'v done it with bone-in skinless chicken thighs (BiSCTs) and breast strips too.

Before.

------

Switched to direct here because my fire was petering out.

BiSCTs.

What I'v been doing is dipping the chix in milk.

Then dredge chix in seasoned flour concoction (thoroughly til its completely dry)

2 cups flour
2 Tsp. cayenne
1 Tbsp. granulated garlic
1 Tbsp. granulated onion
1 Tbsp. Salt

or whatever you like...

Dip the chix in eggs

3 eggs & 2 Tbsp. milk

Whipped/mixed very very well.

Cover with corn flakes.

I break the corn flakes down so they are about 3/8" and smaller. They tend to fall off easy if they're too big.

Cook indirect @ about 425

Last night I HFC'd some drums with the skin on for the first time.

The skin didn't crisp like it would without the corny crunch coat, which I expected, but it was still bite through, with a couple exceptions, when it was finished. Only a couple of the drums had the skin pull a small part of the coating off when I flipp'em or bit'em.

The chix stay tender & juicy on the inside, and dangerously crunchy on the outside...so crunchy you wont be able too see strait while your eating.
