so i found a shoulder at 0.99 cents a pound.  i picked up  two of them, but i left one of them because it was super, super fatty.   i kept the 8lber.



i usually make these as Pernil.... Puerto-rican pork roast.  they are soooooo good.  the cast of players here.....



i poke slits all over it and stuff it with plenty of this.......PLENTY!



all the goodness measured out........



then the juice of one orange....a couple of slices for the top.....



mix it all up..... and it ALREADY smelled awesome!



i gave the pork a nice olive oil rubdown...cuz you know... pork butt just needs more fat!  then i slathered mixture all over and inside.  those skewers you see is where i had to hold this guy together.  it was going all over the place.  so i played dr and put him back together. 



trying to light a handful of coals....ugh...honestly, out of the whole cook, this was the hardest part!  this didnt work.



got my other chimney.... (cuz we all have two right?!   :o ;) :P )  flipped that one and then threw the coals that were warm but not moving along well... lots of patience and fanning.  it finally got going.  i see a mini chimney in my future!



warmed the grill up for a few with the lid on then put the pernil on....



this is it about halfway through....3 hours for sure....it was at about 120



i decided to foil after six hours....it was at 180...ugh... hate that temp!  but it was 6pm and the natives were restless....i foiled it for about an hour and it was already up to 190.  i wanted to go longer, but had to get the family fed.  here it is when i pulled it off.



i didnt think it would be tender enough....but it was.... and pretty moist.  fat cap came off easy and there wasnt much fatty stuff to take out of the meat itself. 



bones slid out easily...



shredded easily.... and was moist....not dry at all.   i love this shot...



tacos with corn tortillas....avocado... pico de gallo.... refried beans made with the fat collected under the pork..... and some chips!  it was good!!



ribs pre-boiling & reaching for the lighter fluid!

Whoa Cookingmama! :o That is one first class cook! :o

I am going to give this a try on my next butt cook. I would so devour that plate! I bet the tribe was really happy. :D

They were happy!  Te best was when my momma was eating the crunchy skin and said "wow, that tastes just like when they roasted whole pigs growing up.".

I used to struggle lighting a few coals for my WSM and purchased the small chimney but have not used it yet since I got the gas assist on my SS performer going about the same time.  That gas assist will make you lazy.  Guess it is time to recycle my saved newspaper.

That does not look like enough seasoning, do you have a recipe or is it adhoc?

Never heard of Pernil, how close to Carnitas is it?

That so beats my dinner of cold cereal tonght. Another late night at work..
Summer is gonna go by too fast for me.. Food looks great!!  8)
