Don't forget @Prof, you can turn those guys upside down and then it's like you're cooking on a flat top.  And, of course, you can mix it up of need be.

Grills up I do everything from steaks (incl. tuna) to chops to sea scallops to asparagus.  In flattop mode I do burgers, potato wedges, Brussel Sprouts.

I love the flat side!  I use it more than the grill side. Works great for smash burgers too.
