Pork butt cook

Need some advice !  I am smoking 2  8 pound pork butts.   Temp and time frame ?   I was thinking 250 degree for about 9 hours.  Anybody with any tips send my way !!! Thank you everyone

That’s about what a 8-9 lb one took for me last time.  I used a snake of Weber charcoal with 2 bottom and 1 on top. Lit the snake with about 10 coals and threw on a few chunks of apple.  Used a drip pan with an inch of warm water too.  Once i got the vent dialed in, she cooked about 240-250 and took about 8 1/2 hours.  Wrapped in foil when it reached 205 and let it sit on the counter for about another hour before shredding.  I’m no expert though, it was only my third time doing one.  Others may have different advice.

Cook it till it's done. That means you plan to cook it till it hits the desired temperature.  Don't count on that time to meet some generic expectation.

are you planning on wrapping?  Time depends largely on that.  in my experience those would take me about 6 hours unwrapped and 1.5 - 2 hours wrapped.  If cooking unwrapped the entire time, it could go 10 - 12 hours at that temp.

Also, include in your planning at least an hour of rest.
